Vegan Irish Soda Bread

1 3/4 cups dairy-free milk (I used oat milk)
1 ¾ tablespoons apple cider or white vinegar
4 cups flour
2 teaspoons baking soda
2 teaspoons salt
Directions
- Preheat the oven to 425 degrees. Grease and flour a 9-inch round cake pan.
- Mix together vinegar and dairy-free milk in a small mixing bowl or pyrex pitcher. Leave the mixture to curdle for 5 minutes.
- Combine flour, baking soda, and salt in a large mixing bowl. Add in the vinegar and milk mixture and stir with a spoon or combine with your hands until it forms a shaggy ball.
- Turn mixture out onto a floured surface and knead for 1-2 minutes until completely combined.
- Form the dough into a ball and press into a disk in the cake pan. Use a knife to make an X-shaped slash about ½ inch deep. Cover the pan with another cake pan or pie tin turned upside down. (I used a pie pan and a large cast iron pan precariously perched on top)
- Bake for 25-30 minutes with the cover on. Remove cover and bake for an additional 10 minutes or until golden brown.
- Remove from the oven and allow to cool. Serve with dairy free butter and jam.
